Baked Sweet Potatoes
This hardly warrants a recipe, but it makes such a delicious easy side that I want to share with you the Brazilian version of a baked potato. Sweet potatoes long roasted to exceptional sweetness with just a little butter added when they coming steaming out of the oven. That’s it.
Baked Sweet Potatoes with Salted or Clarified Butter
Batata-doce asada
Serves 4 as a side
2 large sweet potatoes, scrubbed clean
2 tablespoons salt
Salted butter, or if you have access – clarified butter
Preheat oven to 400°F. Rub sweet potatoes with salt and wrap them in aluminum foil.
Place on a baking sheet and bake for 40 minutes or until tender.
Remove from the oven and unwrap the potatoes leaving the skin intact. Allow to cool for a few minutes. Either squeeze the potatoes until the skin breaks down the center or use a sharp knife to cut a slit through along the top length.
Serve with salted butter or a spoonful of clarified butter.
