Mint Cabbage Slaw
This is a super quick and simple slaw/ salad that can be served with just about any Middle Eastern meal. It can also be added to, or ingredients can be swapped, to make it a versatile go to salad for other cuisines too. Add cilantro and lime instead of mint and lemon and it goes great with Mexican tacos. Add parsley and red onion and it is lovely with chicken or grilled fish in just about any flavor combination.
It was great with the Bahraini Braised Shrimp Balls and Sweet Rice dinner as it added a pop of color, texture, and tang.
Mint Cabbage Slaw
Adapted from Recipe Tin Eats
4 cups finely shredded red cabbage (1/2 a medium sized head)
1-2 carrots , julienned or grated
Handful of mint leaves , roughly chopped (can substitute cilantro or a combination)
2 tbsp lemon juice
3 tbsp olive oil
1/2 tsp salt
Freshly ground black pepper
1. Combine cabbage, carrot, and mint in a large bowl.
2. Combine lemon juice, olive oil, salt and pepper in a small jar and shake to blend.
3. Toss dressing with salad ingredients. Serve!
