Orange and Cucumber Salad
You’ll just have to trust me on this one, I know cucumber and orange sounds a bit odd, and the dressing is so simple as to not be a dressing, but this salad is outstanding.
Orange and Cucumber Salad
Serves 2-4
1 English cucumber
3 oranges
6 small red radishes
Fresh mint leaves, torn into pieces
Salt
Extra virgin olive oil
The freshly squeezed juice of ½ lemon
1. Slice the cucumber thinly, peel the oranges removing all the peel and pith. Cut the oranges into thin rounds, pick out any seeds and the center core pith, if needed. Make sure the radishes are as clean as possible and slice thinly.
2. Add salt, olive oil, and lemon juice, toss everything together and place into a large bowl or serving platter. Sprinkle mint leaves on top.
